Centrally located in the heart of Southeast Asia, Thailand remains the only nation in the region that has never been colonised by a foreign country. However, the fabled South Seas trade routes brought a mosaic of people from throughout the region and the world to Thailand. With them they brought noodles from China,curries from India, and chili peppers from Portugal. Inventive Thai chefs have taken these foreign influences, incorporated local herbs, spices, fruits, and vegetables,
and created the world's original and
most delicious form of "fusion" cuisine.

While Thai cuisine is renowned for being spicy, it is grounded in the principle of the "four pillars" of favour: sweet, salty, sour, and spicy. While all Thai dishes have two or more of these elements, the key to Thai cooking balance.

Eating in Thailand is an all-day affair. Breakfast of rice soup or egg dishes, lunches of noodles or fried rice, and dinners of curry and stir-fried dishes are supplemented by snacks of papaya salad, grilled chicken, or spring rolls. There are so many delicious items to choose from and the variety is so great that eating in Thailand cannot be limited strictly to mealtimes.
